Vegan And Gluten Free Kladdkaka – This Recipe is a Healthy Alternative to the Delicious Swedish Sticky Cake

Hello everyone!

Don’t you just love desserts? I could make and eat dessert all day, every day. Desserts have the shameful reputation of being unhealthy and full of sugar. I am absolutely in love with this new movement of healthy alternatives to traditional dishes. Today’s recipe turns a sweet and savory chocolate cake, into a recipe that will let you eat the whole cake – guilt free of course! 😉 

This delicious recipe turns the legendary Kladdkaka into a whole new, yet still similar, dessert, and to top it off the recipe is vegan, and made for the gluten and lactose intolerant! It is really fun and easy to make, but most importantly: delicious to eat.

  • Ingredients:

Cake

  • 225g walnuts
  • 5-6 tablespoons unsweetened cocoa powder (take sweetened if you want to but you are also adding dates and honey so you don’t want it too sweet!)
  • 1 pinch of salt
  • 15 dates (the food not the human interaction)
  • 2 tablespoons coconut oil (or fat depending on your climate)
  • 2 tablespoons honey (or agave syrup)
  • fresh berries for the topping (unless you can’t get any fresh berries then get some frozen ones, but thaw them first so that your cake doesn’t go mushy while they’re defrosting!)

Cashew Cream

  • 1 pear
  • 120g cashew
  • 1 pinch vanilla powder
  • 100-200ml water
